Arugula Beet Salad

Arugula Beet Salad

Serves 4

Ingredients

4 medium beets
1/2 red onion, sliced very thin
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoons honey
2 tablespoons capers
1 teaspoon ground cumin
salt and freshly ground black pepper to taste
2 cups arugula, washed
2 tablespoons chopped chives
4 ounces chèvre (optional)

Directions

  1. Wash the beets and place them in a large pot; cover them with water. Bring to a boil, then simmer over medium heat for about 30 minutes or until the beets are tender when pierced with the tip of a sharp knife. Drain, cool, and using your hands under running water, slip the skins off the beets. Cut into bite-size pieces.
  2. In a medium bowl, toss the beets with the red onion, olive oil, balsamic vinegar, honey, capers, and cumin; add salt and pepper.
  3. Just before serving, add the arugula to the beets and gently toss.
  4. Mound on a platter and garnish with chives and, if desired, crumbled goat cheese, walnuts and extra protein and roughage.

Healing Mineral Broth

Cover with water in a soup pot (8-12 cups):

  • 3 to 4 carrots
  • 2 potatoes, w/skin scrubbed
  • 1 onion
  • 4 to 5 cloves of garlic mined or pressed
  • 3 stalks celery
  • ½ bunch parsley
  • ½ head of cabbage or bok choy or kale or chard
  • 1 tsp oregano, thyme and/or rosemary
  • 1 tbsp dried seaweed

Simmer covered 30 – 45 minutes, strain solids enjoy. Broth can be stored in the refrigerator for up to 3 days.

 

Herbal Tonic to Support Immune Health

Herbal Tonic to Support Immune Health

In a small/medium sized glass or stainless steel saucepan, simmer these herbs together in a quart of water for about 30 minutes:

3 tbsp dandelion root
2 tbsp fresh, grated ginger root
1 tbsp cinnamon
1 tbsp Licorice root (do not use if you have high blood pressure)
1/2 inch of Astragalus root

Turn off the heat and let the mixture set for another 30 minutes. Strain and then drink one to two cups per day. If you are unable to find the dried version of these herbs, purchase extracts and mix 15 drops of each into a cup of hot water to make a tea.
